PrintPUREE OF LENTILS WITH BAKED EGGS
The combination of lentils with eggs is delicious. This baked dish is easy to prepare.
Serves :
4
Preparation Method :
- Put the lentils in a deep pan. Add the leeks, coriander seeds, fresh coriander, mint, vinegar, and stock.
- Bring to boil, lower the heat, and simmer for 30 - 40 minutes, until the lentils cook and absorb all the liquid.
- Preheat the oven to 180°C / 350°F / Gas 4.
- Season the lentils with salt and pepper and mix well. Spread out in four lightly greased baking dishes.
- Using the back of a spoon, make a hollow in the lentil mixture in each dish.
- Break an egg into each hollow.
- Cover the dishes with foil and bake for 15 - 20 minutes, or until the egg whites are set and the yolks are still soft.
- Sprinkle with plenty of parsley and serve at once.
INGREDIENTS
- 450 grams washed brown lentils
- 3 leeks, thinly sliced
- 2 teaspoon coriander seeds, crushed
- 1 tablespoon chopped fresh coriander (cilantro)
- 2 tablespoons chopped fresh mint
- 1 tablespoon red wine vinegar
- 1 litre vegetable stock
- 4 eggs
- Salt and ground black pepper
- Generous handful of fresh parsley, chopped, to garnish
