PINE APPLE CHICKEN KEBABS

Preparation Method :

  • Drain the ½ cup of pine apple juice into a bowl. Reserve some large chunks of pineapple.
  • In a bowl add garlic, salt, yogurt, fresh coriander and food coloring with all the spices . Mix in the pineapple juice.
  • Cut the chicken into bite-size cubes, add to the yogurt and spice mixture, cover and leave to marinate for about an hour.
  • Cut the peppers and onion into bite sized chunks.
  • Preheat the grill to medium. Arrange the chicken pieces, vegetables and reserved pineapple chunks alternatively on 6-7 metal skewers.
  • Brush the kebabs lightly with the oil and then place the skewers on a flameproof dish or in a grill pan.
  • Turn the chicken pieces and baste with the marinade regularly until cooked through.
  • Serve with salad leaves.

INGREDIENTS

  • 250 grams canned pineapple chunks
  • 1 teaspoon ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon chili powder
  • 1 teaspoon crushed garlic
  • Salt to taste
  • 2 tablespoon natural low fat yogurt
  • 1 tablespoon chopped fresh coriander
  • Few drops of orange food colour
  • 300 grams boneless chicken, skinned
  • ½ red (bell) pepper, seeded
  • ½  yellow or green pepper, seeded
  • 1 large onion
  • 9 cherry tomatoes
  • 1 tablespoon IDHAYAM sesame oil
  • Salad leaves, to serve
