Preparation Method :
- Break the rice noodles into pieces while they are still in the packet.
- Heat oil in a wok to about 180°C/350°F. Stir the oil and drop in a few rice noodles.
- Fry the noodles in batches until they are golden and crisp. Drain on kitchen paper. Repeat until all the noodles are fried, then keep warm.
- Pour off all but the oil from the wok. Add the sesame oil, then add the chicken and stir-fry for 3 minutes.
- Add the yellow bean sauce and stir-fry for another 3 minutes. Add the sugar and water, then stir in the shredded cucumber and spring onions and stir-fry for 3 minutes or until hot through.
- Divide the deep-fried rice noodles among the serving plates and spoon the chicken mixture over them. Sprinkle the radishes on top and serve.

- Peanut Oil for deep-frying
- 2 teaspoon sesame oil
- 500 grams boneless chicken, cut into strips
- 5 tablespoon yellow bean sauce
- 4 tablespoon caster sugar
- 2 cucumbers, finely shredded
- 8 spring onions, finely shredded
- 8 radishes, shredded
