NOODLES WITH CHICKEN LIVERS

Preparation Method :
- Cook the noodles in boiling water for 5 minutes or according to packet instructions. Drain, rinse and drain again.
- Heat the oil in a wok or large open frying pan. When hot, add the garlic, ginger and chicken livers. Stir-fry just long enough to seal the livers.
- Add the mushrooms and noodles and stir-fry over a high heat for 3 minutes or until the noodles are hot.
- Add the soy sauce and sherry and stir-fry for a further 2 minutes. Serve immediately, garnished with spring onions.

- 2 inch piece root ginger, grated
- 200 grams chicken livers, coarsely chopped
- 150 grams shiitake mushrooms, sliced
- 4 tablespoon light soy sauce
- 6 tablespoon dry sherry
- 4 spring onions, finely chopped, to garnish
