MURGH GELAFI SEEKH

Preparation Method :

  • In a large mixing bowl, combine chicken with chilli powder, ginger, garlic, green chillies, grated cheese, mace powder, green cardamom powder and salt. Leave to marinate for an hour.
  • Mince the marinated chicken and transfer to a bowl. Return half the mince to the grinder and mince once more.
  • Combine the single and double minced chicken with fresh coriander.
  • Wet your palms, and shape a handful of mince mixture around a skewer, gently but firmly, spreading the mince to form a seekh kebab. Form two kebabs on each skewer.
  • In a plate, combine the chopped onions, green and red capsicum and tomatoes.
  • Roll the skewered kebabs in the chopped vegetables and press lightly so the vegetables adhere to the kebab.
  • Place on a hot barbecue and grill, turning frequently and basting with butter.
  • Serve hot, sprinkled over with lime juice and Mint Chutney.

INGREDIENTS

  • 1 kg skinless, boneless chicken legs
  • 1 ½ tablespoons yellow Chili powder
  • 100 grams finely chopped Ginger
  • 70 grams finely chopped Garlic
  • 8-10 Green chilies, finely chopped
  • 100 grams Grated processed Cheese
  • 1 teaspoon Mace (javitri) powder
  • 1 teaspoon Green Cardamom powder
  • 2 tablespoons finely chopped fresh Coriander
  • 1 Onion, finely chopped
  • ½ small Green Capsicum, finely chopped
  • ½ small Red Capsicum, finely chopped
  • 1 Tomato, blanched, peeled and finely chopped
  • 4 tablespoons Butter, melted
  • 2 tablespoons Lime juice
  • Salt to taste

To serve:

  • Mint Chutney
