MEAT & VEGGIE SKEWERS

Preparation Method :

  • Preheat the oven to 400°F (200°C/gas 6). Remove any fat from the meat. Chop the meat, vegetables, and bread into large cubes or squares. Slice the sausages thickly.
  • Thread the cubes of meat and vegetables onto steel or wooden skewers, alternating pieces of meat, sausage, vegetables, bread, and sage leaves.
  • Arrange the skewers in a roasting dish and season with salt and pepper. Drizzle with the oil.
  • Bake for 30 minutes, turning occasionally and adding beef stock to moisten as required. When the meat is well browned, remove from the oven and serve hot.

INGREDIENTS

  • 500 grams pork
  • 500 grams boned veal shoulder or shank
  • 4 boneless skinless chicken breast halves
  • 2 red bell pepper (capsicum)
  • 2 yellow bell pepper (capsicum)
  • 500 grams baby onions
  • 30 cherry tomatoes
  • 6 thick slices crusty bread
  • 5 fresh Italian pork sausages
  • 25 leaves fresh sage
  • Salt and freshly ground black pepper
  • 100 ml sesame oil
  • 150 ml beef stock
