LAMB KOFTAS WITH MINTED COUSCOUS

Preparation Method :
- Combine the lamb and bell pepper in a food processor and process until a coarse paste forms. Use wet hands to shape the mixture into twelve sausage-shaped lengths.
- Thread each kofta onto a metal skewer.
- Mix the couscous and mint in a medium bowl. Pour the stock over the couscous mixture. Cover the bowl and let stand until the couscous has absorbed the liquid, about 10 minutes. Fluff up with a fork and set aside.
- Preheat a grill pan or barbecue on high. Grill the koftas until cooked through, about 5 minutes on each side. Serve hot on a bed of the minted couscous.

- 500 grams instant couscous
- 5 tablespoons finely chopped fresh mint
- 600 ml chicken stock, hot
