Preparation Method :
- Apply the lemon juice, salt and pepper to the fish fillets and leave or at least half an hour.
- Mix together the tomato, parsley, onions, green chilli, and a little salt. divide the mixture into 4 portions and spread over the fillets, starting from the tail end, roll up each piece like a Swiss roll.
- Place each roll in the seasoned flour, turning it so that it is completely covered. Press the roll firmly with your hand so that flour sticks well.
- Mix the remaining flour with half the beaten egg to make a batter of coating consistency, adding a little water if necessary. Dip each fish the batter.
- Heat some oil in a frying pan and deep-fry each fish roll until it turns pale golden brown. Remove, drain well and keep aside.
- Heat the oil again and fry the rolls again till they become golden brown and cooked through. Serve with a potato mayonnaise and grilled tomatoes.

- 4 pomfret or surmai fish fillets
- Juice of 1 lemon
- Salt and pepper to taste
- 1 medium tomato, finely chopped
- 50 grams parsley / coriander leaves ,finely chopped
- 2 tablespoons onion, finely chopped
- 1 small green chilli, finely chopped
- 150 grams flour, seasoned
- 1 egg, beaten water, if required
- Cooking oil to deep-fry
