- Mix together the lemon juice, ginger, chopped green chilies, fresh coriander, mint, ground coriander and salt in a bowl .
- Add the fish chunks to the mixture , cover and leave to marinate for about 20-30 minutes.
- Cut the red and green peppers into large squares and divide the cauliflower into individual florets.
- Preheat the grill to hot. Arrange the peppers, cauliflower florets, button mushrooms and cherry tomatoes alternately with the fish pieces on 4 -5 skewers.
- Brush the kebabs with the oil and any remaining marinade. Transfer to a flameproof dish and grill for 5 minutes or until the fish is cooked right through.
- Garnish with lime quarters and serve the kebabs on a bed of yellow rice.

- 300 grams firm white fish fillets, such as cod
- 50 ml lemon juice
- 1 teaspoon grated fresh root ginger
- 3 fresh green chilies, very finely chopped
- 1 tablespoon very finely chopped fresh coriander (cilantro)
- 1 tablespoon very finely chopped fresh mint
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1 red (bell) pepper
- 1 green (bell) pepper
- ½ medium cauliflowers
- 10 buttons (white) mushrooms
- 9 cherry tomatoes
- 1 tablespoon Cooking oil
- 1 lime, quartered, to garnish (optional)
- Yellow rice, to serve
