DUCK YAKITORI WITH SCALLIONS

Preparation Method :

  • Yakitori Sauce Combine the soy sauce, stock, mirin, and sugar in a small saucepan. Bring to a boil, stirring from time to time, over high heat.
  • Reduce the heat and simmer until the sauce is reduced by about one-third, about 5 minutes. Set aside to cool slightly. Pour into a shallow ceramic dish.
  • Skewers Divide the ingredients evenly, and thread the duck and scallions onto the skewers. Place the skewers in the yakitori sauce. Turn to coat in the sauce.
  • Preheat a grill pan or barbecue on high. Grill the skewers, basting with the yakitori sauce from time to time, until just cooked through, 10 minutes. Serve hot with the rice.

INGREDIENTS

Yakitori Sauce

  • 150 ml soy sauce
  • 100 ml chicken stock
  • 100 ml mirin
  • 100 grams caster sugar

Skewers

  • 1 kg boneless duck breasts, trimmed and cut into 1-inch (2.5-cm) pieces
  • 10 scallions, trimmed and cut into lengths
  • Steamed long-grain rice, to serve
