CHILLI CHICKEN WITH NOODLES

Preparation Method :
- Cook the noodles in plenty of boiling water for 5 minutes or according to packet instructions. Drain.
- Heat the oil in a wok or large open pan, add the red pepper and spring onions and stir-fry over a high heat for 1 minute. Add the ground coriander, chilli flakes or sauce and black pepper.
- Add the chicken and stir-fry until just cooked and coated with the spice mixture. Add salt to taste and stir in the lime juice, bean sprouts and noodles. Serve immediately.

- 250 grams medium egg noodles
- 2 tablespoon sesame oil
- 2 red pepper, finely diced
- 8 spring onions, finely sliced
- 2 teaspoon ground coriander
- 2 teaspoon chilli flakes or chilli sauce
- 1 teaspoon freshly ground black pepper
- 500 grams boneless chicken, cut into strips
- Salt to taste
- Juice of 2 limes
- 150 grams bean sprouts
