CHILI CHICKEN DRUMSTICKS

Preparation Method :

  • Heat the oil in a frying pan and fry the onion and garlic until soft and lightly colored.
  • Add the ketchup, Worcestershire sauce, chili seasoning, vinegar, jam and mustard and bring slowly to the boil. Simmer gently for 2 minutes, and then remove the pan from the heat and leave to cool.
  • Arrange the drumsticks in a shallow dish in a single layer and pour the sauce over them.
  • Cover and leave to marinate in a cool place for at least 3 hours, turning the drumsticks occasionally.
  • Drain the marinade from the drumsticks and reserve.
  • Put the drumsticks under a preheated moderate grill and cook for about 8-10 minutes on each side until they are cooked through and well browned.
  • Put them on to a warmed platter and garnish with parsley sprigs.
  • Heat the reserved marinade in a saucepan.
  • Serve with the drumsticks.  

INGREDIENTS

  • 4 tablespoons IDHAYAM Sesame oil
  • 2 onion, finely chopped
  • 2 garlic clove, crushed
  • 250 ml tomato ketchup
  • 5 tablespoons Worcestershire sauce 
  • 6 teaspoons chilli seasoning
  • 300 ml red wine vinegar 
  • 6 tablespoons apricot jam 
  • 2 teaspoon mustard powder 
  • 25 chicken drumsticks 
  • Parsley sprigs, to garnish
