CHICKEN TAGINE WITH PRUNES

Preparation Method :

  • Place the chicken, onions, butter, cinnamon, saffron, salt, pepper, and water in a large saucepan. Cover and simmer over low heat for 40 minutes, stirring occasionally. Remove the chicken and keep warm.
  • Add the prunes to the liquid and simmer until the prunes have softened, 10-15 minutes. Add the honey and lemon juice and simmer over low heat until reduced by half, about 10 minutes.
  • Return the chicken to the pan and simmer for 10 minutes. Sprinkle with the sesame seeds and almonds. Serve hot with the couscous.

  • 2 kg chicken, cut into pieces
  • 5 large onions, sliced
  • 100 grams butter
  • 2 stick cinnamon
  • 1 teaspoon saffron threads
  • Salt and freshly ground black pepper
  • 300 grams pitted prunes
  • 4 tablespoons honey
  • 4 tablespoons freshly squeezed lemon juice
  • 2 tablespoon sesame seeds
  • 150 grams almonds
  • Freshly prepared couscous, to serve
