- Heat the oil in a large saucepan. Add the chicken thighs or drumsticks and brown all over.
- Season with salt and plenty of pepper. Lower the heat and continue to cook for about 10 minutes, stirring frequently, until the chicken is tender.
- Remove with a slotted spoon and set aside.
- Increase the heat and add the butter. As soon as it has melted, add the garlic, onion and mushrooms and stir-fry over a high heat for about 5 minutes until the mushrooms are just cooked.
- Stir in the breadcrumbs, parsley and reserved chicken and cook for 2-3 minutes to heat the chicken through.
- Toss the red and yellow peppers with the vinaigrette and arrange them on four warmed serving plates. Place the chicken on the peppers and serve at once, topped with the sauteed mushrooms.

- 4 tablespoons sesame oil
- 10 chicken thighs or drumsticks
- 50 grams butter
- 4 large garlic cloves, crushed
- 2 small onion, finely chopped
- 250 grams mushrooms, sliced
- 4 tablespoons dried breadcrumbs
- 4 tablespoons chopped flat leaf parsley
- 4 red peppers, cored, deseeded and thinly sliced
- 4 yellow peppers, cored, deseeded and thinly sliced
- 5 tablespoons vinaigrette dressing
- Salt and pepper
