Preparation Method :
- Heat the oil in a large frying pan over low heat. Add the onions and simmer until caramelized, about 30 minutes. Heat the balsamic vinegar in a small saucepan over medium heat until it reduces by half.
- Heat the remaining oil in a large frying pan over medium-high heat. Cook the steaks for 5 minutes on each side. Remove from the heat. Cover and let rest for 5 minutes.
- Serve the steaks on individual plates, topped with the onions and balsamic sauce with the arugula on the side.
