- Beat together all the ingredients, except onion, bacon, courgettes and mushrooms.
- Adjust the seasoning and pour into the frying pan, simmer to low flame and cook until the egg mixture begins to set.
- Heat the oil in a heavy-bottomed frying pan and fry the onion, bacon, courgettes and mushrooms until cooked.
- Preheat the grill.
- Place the pan under a hot grill for about 3 minutes or until browned.
- When warm carefully remove the frittata from the pan, cut into wedges and serve hot.
