Preparation Method :
- Heat 3 tablespoon oil in a kadhai, add cumin seeds and mustard seeds. When they splutter, add coriander seeds and fennel seeds. Stir and add garlic-ginger. Stir for a few seconds.
- Add the onions and cook till slightly soft, add green chillies and the mashed potatoes. Mix well. Add salt, turmeric powder, garam masala powder and green coriander.
- Mix well and check the seasonings. Remove from heat and cool slightly.
- Mix gram flour with water to make a thick coating batter. Add salt, red chilli powder and turmeric and beat the gram flour batter well with the hand till light and smooth. Let it rest for 15 minutes.
- Heat oil in a kadhai for frying. Make walnut size balls from the cooked potato mixture. Dip in the gram flour batter and roll on all sides to coat well.
- Fry in hot oil till light golden on all sides. Remove on absorbent paper. Sprinkle chat masala. Serve with hari chutney or sauce.
INGREDIENTS
- 4 medium potatoes - boiled and roughly mashed
- 2 onions - chopped
- 2 green chillies - chopped finely
- 4 flakes garlic-crushed
- 1½ teaspoon finely grated ginger
- 3 tablespoon Sesame oil
- 1 teaspoon cumin seeds
- ½ teaspoon mustard seeds
- 2 teaspoon coriander seed- crushed
- 2 teaspoon fennel seeds - crushed
- 1 ½ teaspoon salt
- ½ teaspoon garam masala powder
- Pinch of turmeric powder
- ¼ cup green coriander leaves - chopped
- Peanut Oil for frying
- Chat masala to sprinkle
For Batter
- 250 grams flour
- 1 teaspoon salt
- Pinch of turmeric powder
- 1 teaspoon red chilli powder
