Preparation Method :
- Add the turmeric powder and salt to the tamarind juice. Set aside.
- The Spice Powder: Fry all the ingredients for the spice powder in oil till the dhal turns golden. Remove from heat and grind to a fine powder.
- Heat the oil in a frying pan and add all the ingredients for tempering. When the mustard seeds splutter, add the yam. Sauté for 1 minute and add the tamarind juice.
- Cover pan and simmer for about 10 minutes. Add the chopped plantains and cook for another 10 minutes till all the water is absorbed.
- Stir in the spice powder and serve hot.
INGREDIENTS
- A marble-sized tamarind ball, soaked and juice extracted
- ½ teaspoon turmeric powder
- Salt to taste
- 250 grams yam, peeled, chopped and cut into small cubes
- 2 medium-sized raw green plantains, peeled and cut into small cubes
Spice Powder
- 2 tablespoon Bengal gram dhal
- 2 teaspoon uncooked rice
- 2 teaspoon Cooking oil
- 3 dry red chillies
- ½ teaspoon asafetida powder
Tempering
- ½ teaspoon black gram dhal
- ½ teaspoon cumin seeds
- 1 teaspoon Cooking oil
- 1 teaspoon mustard seeds
- 1 dry red chilli, halved
- A few curry leaves
