MIXED VEGETABLE KOOTU(AVIAL)

Preparation Method :

  • The Spice Paste: Grind the coconut, green chillies and cumin seeds into a fine paste by adding very little water. Mix the curd into the ground paste. Set aside.
  • Cook the vegetables separately in a heavy pan, adding very little water.
  • Mix all the cooked vegetables together. Add the salt and turmeric powder.
  • Stir in the spice and curd paste and heat through, taking care to not to let it curdle.
  • Sprinkle in the coconut oil and curry leaves. Mix well. Do not heat again.
  • Serve immediately with rice.

INGREDIENTS

  • 150 ml sour curd, whisked
  • 150 grams yam, Peeled and chopped into finger batons.
  • 150 grams ash gourd, Peeled and chopped into finger batons.
  • 150 grams raw green plantains, Peeled and chopped into finger batons.
  • 1 potato
  • 75 grams shelled green peas, Peeled and chopped into finger batons.
  • ½ teaspoon turmeric powder
  • 2 drumsticks, chopped into finger batons.
  • 50 ml coconut oil
  • Salt to taste  
  • A few curry leaves

Spice Paste

  • 120 grams fresh coconut, grated
  • 6 green chillies
  • 1 teaspoon cumin seeds
