Preparation Method :
- The Spice Paste: Grind the coconut, green chillies and cumin seeds into a fine paste by adding very little water. Mix the curd into the ground paste. Set aside.
- Cook the vegetables separately in a heavy pan, adding very little water.
- Mix all the cooked vegetables together. Add the salt and turmeric powder.
- Stir in the spice and curd paste and heat through, taking care to not to let it curdle.
- Sprinkle in the coconut oil and curry leaves. Mix well. Do not heat again.
- Serve immediately with rice.
INGREDIENTS
- 150 ml sour curd, whisked
- 150 grams yam, Peeled and chopped into finger batons.
- 150 grams ash gourd, Peeled and chopped into finger batons.
- 150 grams raw green plantains, Peeled and chopped into finger batons.
- 1 potato
- 75 grams shelled green peas, Peeled and chopped into finger batons.
- ½ teaspoon turmeric powder
- 2 drumsticks, chopped into finger batons.
- 50 ml coconut oil
- Salt to taste
- A few curry leaves
Spice Paste
- 120 grams fresh coconut, grated
- 6 green chillies
- 1 teaspoon cumin seeds
