COCONUT YAM KOOTU (ERISHERRI)

Preparation Method :
- Fry the grated coconut in oil till golden brown and set aside.
- Cook the vegetables in sufficient water, adding the chilli powder, pepper powder, salt and turmeric powder.
- Cover pan and simmer on low heat till the vegetables are tender. Mash the vegetables and set aside.
- Grind half of the fried coconut to a paste with the cumin seeds. Mix the ground paste into the cooked vegetables and simmer for few minutes.
- Heat oil, when hot add in the mustard seeds, red chilli and curry leaves. When the mustard seeds splutter add to the vegetables.
- Stir in the remaining fried coconut Just before turning off the heat.
- Serve hot with rice and papadams.
INGREDIENTS
- 500 grams yam, peeled and cut into small cubes
- 250 grams raw green plantains, peeled and cut into small cubes
- 150 grams fresh coconut, grated
- 2 tablespoon coconut oil
- 2 teaspoon chilli powder
- 1 teaspoon black pepper powder
- Salt to taste
- ¼ teaspoon turmeric powder
- 1 teaspoon cumin seeds
Tempering
- 1 teaspoon mustard seeds
- 1 dry red chilli, halved
- 1 tablespoon coconut oil
- A few curry leaves
