COCONUT YAM KOOTU (ERISHERRI)

Preparation Method :

  • Fry the grated coconut in oil till golden brown and set aside.
  • Cook the vegetables in sufficient water, adding the chilli powder, pepper powder, salt and turmeric powder.
  • Cover pan and simmer on low heat till the vegetables are tender. Mash the vegetables and set aside.
  • Grind half of the fried coconut to a paste with the cumin seeds. Mix the ground paste into the cooked vegetables and simmer for few minutes.
  • Heat oil, when hot add in the mustard seeds, red chilli and curry leaves. When the mustard seeds splutter add to the vegetables.
  • Stir in the remaining fried coconut Just before turning off the heat.
  • Serve hot with rice and papadams.

INGREDIENTS

  • 500 grams yam, peeled and cut into small cubes
  • 250 grams raw green plantains, peeled and cut into small cubes
  • 150 grams fresh coconut, grated
  • 2 tablespoon coconut oil
  • 2 teaspoon chilli powder
  • 1 teaspoon black pepper powder
  • Salt to taste
  • ¼ teaspoon turmeric powder
  • 1 teaspoon cumin seeds

Tempering

  • 1 teaspoon mustard seeds
  • 1 dry red chilli, halved
  • 1 tablespoon coconut oil
  • A few curry leaves
