Preparation Method :
- Heat the oil in a non-stick pan. Add the cumin seeds and saute until they start to change colour. Add the chopped onions, ginger and chillies, and stir-fry until the onions become translucent.
- Dissolve the ground turmeric, cumin, coriander and chilli powder in water and add this to the pan. Cook on a medium heat for 30 seconds, stirring continuously.
- Add the tomatoes and cook on a high heat for 2 minutes, stirring all the time. Stir in the crumbled tofu, peppers and salt. Mix well.
- Reduce the heat and cook for 5 minutes, tossing frequently to prevent the tofu from sticking. Sprinkle on the coriander leaves and serve hot.

- 3 teaspoons sesame oil
- 2 teaspoon cumin seeds
- 4 medium-sized onions, chopped
- 2.5cm piece root ginger, chopped
- 4 green chillies, chopped
- 1 teaspoon ground turmeric
- 2 teaspoon ground cumin
- 2 tablespoon ground coriander
- 2 teaspoon red chilli powder
- 4 medium-sized tomatoes, chopped
- 500 grams tofu, crumbled
- 4 medium-size green peppers, seeded and chopped
- 2 teaspoon salt
- 50 grams fresh coriander leaves, chopped
