Preparation Method :
- Heat half of the ghee and fry the semolina till golden. Set aside.
- Heat the remaining ghee and fry the cashew nuts till golden and set it aside.
- Mix the semolina, ginger, chillies, coriander leaves, sour curd and salt, using very little water. The batter should be of a thick pouring consistency.
- Heat 2 teaspoon ghee and add all the ingredients for tempering. When the mustard seeds splutter, add to the batter. Mix well.
- Mix in the fried cashew nuts. Steam in greased idli moulds in a pressure cooker without the weight at least for 10 - 15 minutes.
- Serve hot with coconut chutney.
INGREDIENTS
- 75 grams ghee
- 150 grams fine semolina
- 2 tablespoon cashew nuts, halved and chopped
- 1" piece ginger grated
- 2 green chillies, chopped fine
- A small bunch of coriander leaves, chopped fine
- 75 grams sour curd
- Salt to taste
Tempering
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 2 teaspoon ghee
- A few curry leaves
