Preparation Method :
- Soak rice in hot water for an hour; and in another vessel, soak the urad dal and methi.
- Grind the rice to a fine paste first;
- Remove the rice from the grinder and add the dal with the methi. Grind the dal to a smooth batter, as the dosa is softer when prepared.
- Now mix the dal and the rice dough in the grinder for a few seconds and add salt and stir.
- Ferment the dough for about 10 to 11 hours. When it rises, store in a refrigerator.
- Both idli and dosa may be prepared in this batter. The dough is ideal for idlis; add a little water for preparing dosai.
- Preparing a plain Dosa or a Ghee roast:
- Heat a non-stick tava, and spread a ladle of the batter; pour a teaspoon of oil around it. Now turn after a minute to cook on both sides. Spread ½ teaspoon of ghee and fold.
- Serve hot with chutney.
