SEMOLINA PANCAKES

Preparation Method :

  • In a mixing bowl, combine the semolina, all- purpose flour and rice flour with yoghurt, cumin seeds, chillies, coriander, curry leaves and salt. Mix in water, cover the batter and set aside for 1 hour.
  • When ready to use, thin down the batter to a watery consistency.
  • Grease and heat a tawa till it begins to smoke. Sprinkle some water and brush some more oil on the griddle.
  • Using a ladle or small bowl, pour the batter on the griddle and swirl the griddle to spread the batter thinly and evenly, as for a crepe.
  • Spoon a teaspoonful of oil around the edges of the dosa and cook till golden and crisp.
  • Transfer to a plate and serve hot with Coconut Chutney.

INGREDIENTS

  • 400 grams semolina
  • 400 grams all-purpose flour
  • 400 grams rice flour
  • 400 grams plain yoghurt
  • 4 teaspoons cumin seeds
  • 5 green chillies, finely chopped
  • 4 tablespoons fresh coriander, finely chopped
  • 5 fresh curry leaves, finely chopped
  • Salt to taste
  • Sesame Oil for frying
