SEMOLINA MASALA DOSA

Preparation Method :

  • Peel and mash the potatoes.
  • Preheat oil in a medium frying pan over medium heat.
  • Add peanuts and fry till 3 minutes. Transfer to a bowl.
  • In the remaining oil add black mustard seeds and curry leaves. After half a minute add onion and green chilies and fry till golden brown.
  • Add potatoes, turmeric powder and salt and fry over high heat for 5 minutes. Add peanuts. Mix well. Remove from fire.
  • Mix together, semolina, refined flour, buttermilk and a little salt. Set aside for at least half an hour.
  • Preheat griddle over high heat. Smear the griddle with a half cut onion.
  • Pour ½ of the batter with a ladle and move round and round to form an 8 inches diameter disc. Put a little fat around it and turn over.
  • Put ½ potato stuffing on one side of the disc. Fold the disc to give the shape of a semi circle. Repeat process for the remaining batter and potatoes. Serve hot.
  • Serve hot.

  • 400 ml peanut oil
  • 400 grams peanuts 
  • 3 teaspoons black mustard seeds
  • 2 sprig curry leaves
  • 2 chopped onion
  • 4 chopped green chilies
  • 2 teaspoon turmeric powder
  • Salt to taste
  • 400 grams semolina
  • 4 teaspoons refined flour 
  • 200 ml buttermilk
