MASALA UTTAPAM

Preparation Method :

  • Soak rice, urad dal and fenugreek seeds separately in water for about 8 hours and grind into thick batter consistency and keep them overnight for fermentation.
  • Stir the fermented batter; add salt and stir well.
  • Heat oil in pan; add cumin seeds and when they crackle add onions and saute until translucent.
  • Add tomatoes and mashed potatoes, capsicums, chilies and little water and cook for 15 minutes.
  • Heat a pan or griddle and grease it with oil or ghee.
  • Pour a ladleful batter at the centre of the griddle and spread it a thick round pancake.
  • Put the prepared masala on uttapam and spread neatly. Add oil or ghee at the sides of the uttapam and turn it reverse.
  • Cook for 2 minutes and transfer it to serving plate.
  • Serve hot with coconut chutney and sambhar.

INGREDIENTS

For Uttapam:

  • 200 grams Rice
  • 200 grams Urad Dal
  • 1 tablespoon fenugreek seeds
  • ½ teaspoon Baking soda
  • Salt to taste

For Masala:

  • 1 big Onion, finely chopped
  • 2 Potatoes, boiled and mashed
  • 1 large Tomato, deseeded and finely chopped
  • 4 Green Chilies, finely chopped
  • 1 teaspoon Cumin seeds
  • 100 gram Corn kernels, steamed
  • 1 Green Capsicum, Finely chopped
  • 1 Tablespoon fresh Coriander leaves, finely chopped
  • IDHAYAM Sesame oil or Ghee if required
