- Heat the butter in a saucepan over a medium heat and add the spices, onion, ginger, garlic, potato, tomatoes, sugar and ground spice.
- Adjust seasoning with salt and pepper. Fry for about 5 minutes
- Add 2 cups of water. Cover and cook for 10-15 minutes or until the potato is soft.
- Process the potato to a smooth puree. Return to the saucepan over a medium heat, add more hot water if needed.
- Add the diced paneer and lemon juice and cook for about 3-5 minutes.
- Add in the fresh coriander, very small cubes of cucumber and a little diced paneer.

- 150 grams paneer, diced into very small cubes
- 1 potato, finely chopped
- 2 tablespoons butter
- 1 onion, chopped
- 1 inch piece of ginger, grated
- 2-3 garlic cloves, crushed
- 1 teaspoon cumin seeds
- ½ teaspoon sugar
- 1½ teaspoon lemon juice
- 1 teaspoon coriander powder
- Salt and freshly ground black pepper, to taste
- Fresh coriander leaves, finely chopped
- Cucumber, diced into very small cubes
