Preparation Method :
- Place the spinach in a pan, along with the spring onions and one cup of the stock, and cook until the spinach is just tender; set aside to cool.
- Puree the cooled spinach in a blender, and strain it through a strainer or a square of muslin.
- Grind the almonds to a fine paste with a little milk and add this to the rest of the milk.
- Mix the remaining stock, the almond milk, and the spinach in a pan, bring it to a boil, then simmer for a few minutes for the flavours to blend; season to taste.
- Cool the soup completely, and chill it in the refrigerator until it is time to serve.
- Blend in the cream. Divide the soup into 4 bowls, top with a small spinach leaf and some chopped almonds, and serve.

- 150 grams spinach, washed
- 3 spring onions
- 750 ml stock
- 2 tablespoon almonds, blanched
- 100 ml milk
- Salt and pepper to taste
- 50 ml cream
For the garnish
- 4 small spinach leaves
- 4 almonds, blanched, chopped
