Preparation Method :
- Melt the butter in a saucepan with the bay leaf and half the dill. Simmer over a gentle heat for a minute or two to allow the flavours to develop.
- Add the onion and celeriac, cover and simmer gently for about 10 minutes until they begin to soften.
- Add the stock and seasoning. Bring to the boil, cover and simmer for about 30 minutes until the vegetables are tender. Remove the bay leaf.
- Liquidize the mixture then return to the pan and reheat. Remove from the heat, stir in the cream, lemon juice and remaining dill. Check the seasoning and serve.

- 4 tablespoon chopped dill
- 2 onions, chopped finely
- 2 medium celeriac, cut into small cubes
- 1 liter Strong Vegetable Stock
- Salt and pepper
- 5 tablespoon single cream
- 4 teaspoon lemon juice
