Preparation Method :
- Soak dal for 20 minutes remove all water and grind into a fine paste with chillies, asafoetida and salt.
- Garnish with finely chopped coriander leaves.
- Make certain the batter is very thick. Heat the oil and pat a little dough over a wet banana leaf, or a plastic sheet, holding it on the palm of the hand.
- Make a hole on the centre of the dough with the forefinger and drop it in the pre-heated oil.
- The dough will emit a sizzling sound and within seconds turn it over the other side.
- When it turns golden remove the vadai from the oil and lay it on a paper napkin spread on a plate.
- Serve these hot crispy vadais with chutney and sambhar.

- 800 grams Urad dal
- 15 Green chillies
- 4 tablespoon asafoetida powder
- 100 grams Coriander leaves
- Cooking oil for frying
- Salt to taste
