VEGETABLE POPPADOM ROLLS

Preparation Method :
- Fry the tomatoes in little oil. Add the turmeric powder, red chilli powder and green coriander to the boiled vegetables. Mix well.
- Remove from heat and keep aside to cool. Divide the mixture equally into 4-6 portions.
- Take a poppads and dip it in water to make it pliable. Put one portion of the vegetable mixture along the centre and roll.
- Press and seal the ends. Repeat with the other poppadoms.
- Heat the oil in a wok or pan; deep-fry the rolls till crisp. Remove immediately and serve hot.
INGREDIENTS
- 1 Carrot, chopped, boiled and drained
- 1 Potato, chopped, boiled and drained
- 1 Tomato, chopped
- 1 Cauliflower, chopped, boiled and drained
- 4-6 medium-sized Poppads
- 6-9 French beans, chopped, boiled and drained
- ¼ teaspoon Turmeric powder
- 1 tablespoon Fresh green coriander leaves, chopped
- Red chilli powder and Salt to taste
- Cooking oil for frying
