SWEET FRIED LOOPS
These irresistible fritters are delicious when served with hot chocolate or coffee.

Preparation Method :
- Mix the water, oil, sugar, and salt in a large pan and bring to boil. Remove from the heat, and then sift in the flour. Beat well with a wooden spoon until smooth.
- Beat in the egg to make a smooth, glossy mixture with a piping consistency. Spoon into a pastry bag fitted with a large star nozzle.
- Heat the oil in a karahi, wok, or deep fryer to a temperature of 190°C / 375°F, or until a cube of bread dropped in the oil browns in about 45 seconds.
- Pipe loops of the mixture, two at a time, into the hot oil. Cook the loops for a few minutes until they are golden.
- Lift out the loops with a wire skimmer or slotted spoon and drain them on kitchen paper.
- Dredge them with caster sugar and serve warm.

- 450 ml water
- 1 tablespoon olive oil
- 1 tablespoon caster (superfine) sugar, plus extra for dredging
- ½ teaspoon salt
- 150 gms plain (all-purpose) flour
- 1 large egg
- Cooking oil, for deep-frying
