Preparation Method :
- Sift the flour, salt and chilli powder into a bowl with sufficient water to make a thick batter.
- Add in the chopped chillies and fresh coriander into the batter, add the butter. Drop in the onion rings to coat thickly with batter.
- Heat the oil in a deep frying pan. Drop in the onion rings and deep-fry until crisp and golden.
- Remove from the pan with a slotted spoon, drain on kitchen paper and keep warm.
- Dip the spinach leaves into the batter and deep-fry in the same way.
- Repeat the process with the potato slices. Garnish with whole fried chillies and serve hot.
INGREDIENTS
- 220 grams potatoes, parboiled and sliced
- 100 grams gram flour
- 100 ml water
- 75 grams onions, cut into rings
- 1-2 green chillies, finely chopped
- 1 tablespoon finely chopped fresh coriander
- 1 teaspoon butter, melted
- IDHAYAM MANTRA peanut Oil, for deep-frying
- 8-10 small fresh spinach leaves
- Salt and chilli powder, to taste
- Whole red chillies, fried, to garnish
