- Cook the chickpeas in a pan of boiling water for 1 hour.
 - Drain return to the pan and add the onion, chillies, ginger, salt and cumin. Bring to the boil. Simmer, covered, until the meat and chickpeas are cooked.
 - Cool and grind to a paste in a food processor.
 - Transfer the mixture into a mixing bowl, add the fresh coriander and mint, lemon juice and flour.
 - Knead well, Divide into 10 portions and roll each into a ball, then flatten slightly. Chill for about 45 minutes.
 - Dip the burgers in the beaten egg and shallow fry each side until golden brown serve hot with the lime.
 
INGREDIENTS
- 50 grams chickpeas, soaked overnight in water
 - 2 onions, finely chopped
 - 250 grams lean lamb, cut into small cubes
 - 1 teaspoon cumin seeds
 - 1 teaspoon garam masala
 - 6 fresh green chillies, roughly chopped
 - 2 in piece fresh ginger, crushed
 - 1 tablespoon gram flour
 - 2 eggs, beaten
 - Few fresh coriander (cilantro) and mint leaves, chopped
 - Salt, to taste
 - Juice of 1 lemon
 - IDHAYAM sesame oil, for shallow-frying
 - Half a lime
