Preparation Method :
- Divide the dough into 18-20 portions. Shape each portion into a patty. Cover with a damp towel or plastic wrap and set aside.
- Mix the filling ingredients except oil in a bowl and knead until well blended. Divide into 18-20 portions; keep aside.
- Flatten each patty into a thick round. Place one portion of filling in the centre of the dough, then bring the sides of the dough over the filling to enclose completely.
- Pinch the seams together until thoroughly sealed. Cover with a plastic wrap and keep aside. Shape and stuff the remaining patties.
- Heat the oil in a wok till it starts smoking. Slip patties in batches. Fry until pale golden in colour.
- The crust should be delicately blistered and crisp. Drain excess oil and serve hot.

- 500 grams refined flour
- ¼ teaspoon salt
- 50 grams ghee
- 2 tablespoon yogurt
- 100 ml water, chilled
Filling
- Green chillies to taste, deseeded, finely chopped
- 1 tablespoon ginger, finely chopped
- 250 grams potatoes, boiled, mashed
- 1 teaspoon coriander powder
- ½ teaspoon cumin powder
- ½ teaspoon fennel, ground
- 1 teaspoon garam masala
- A pinch Turmeric powder
- 3 teaspoon lemon juice
- Salt, to taste
- 2 tablespoon green coriander, finely chopped
- IDHAYAM MANTRA peanut oil for frying
