CHICKEN AND HAM PIE

Preparation Method :

  • Preheat the oven to 180°C / 375°F / Gas Mark 4.
  • Melt the butter in a large pan and brown the chicken and ham or bacon. Add the carrots and mushrooms and fry for 5 minutes.
  • Stir in the white wine and turn up the heat so the wine boils and reduces by half.
  • Mix the evaporated Milk with the stock. Blend a little milk with the flour to form a smooth paste.
  • Stir in the remaining mixture and gradually add to the pan, stirring continuously, until the sauce boils and thickens. Adjust seasoning and transfer to a pie dish.
  • Roll out the pastry on a lightly floured surface. Cover the pie and moisten the edges make sure the pastry is well sealed.
  • Brush with the milk or beaten egg to glaze, then bake for about 20 minutes or until the pastry turns golden brown. Serve immediately.

  • 500 grams chicken breast, diced
  • 220 grams cooked ham or bacon, diced
  • 2 carrots, diced
  • 120 grams button mushrooms
  • 250 ml white wine
  • 400 grams Evaporated Milk
  • 150 ml chicken stock
  • 35 grams flour
  • Black pepper and salt to taste
  • 250 grams puff pastry
  • Milk or beaten egg, to glaze
