Preparation Method :
- Preheat the oven to 180°C / 375°F / Gas Mark 4.
- Melt the butter in a large pan and brown the chicken and ham or bacon. Add the carrots and mushrooms and fry for 5 minutes.
- Stir in the white wine and turn up the heat so the wine boils and reduces by half.
- Mix the evaporated Milk with the stock. Blend a little milk with the flour to form a smooth paste.
- Stir in the remaining mixture and gradually add to the pan, stirring continuously, until the sauce boils and thickens. Adjust seasoning and transfer to a pie dish.
- Roll out the pastry on a lightly floured surface. Cover the pie and moisten the edges make sure the pastry is well sealed.
- Brush with the milk or beaten egg to glaze, then bake for about 20 minutes or until the pastry turns golden brown. Serve immediately.

- 220 grams cooked ham or bacon, diced
- 2 carrots, diced
- 120 grams button mushrooms
- 250 ml white wine
- 400 grams Evaporated Milk
- 150 ml chicken stock
- 35 grams flour
- Black pepper and salt to taste
- 250 grams puff pastry
- Milk or beaten egg, to glaze
