ONION, MANGO AND PEANUT CHAAT

Preparation Method :
- To make the chaat masala, grind all in the spices with salt and pepper together, then season with little oil.
- Fry the peanuts in the oil until lightly browned, then drain on kitchen paper until cool.
- Mix the onion, cucumber, mango, chilli, fresh coriander and mint in a bowl. Sprinkle in 1 teaspoon of the chaat masala.
- Stir in the peanuts and then add lime juice and sugar to taste. Set the mixture aside for at least 20 minutes.
- Spoon the mixture into a serving bowl, sprinkle another 1 teaspoon of the chaat masala over and serve.
INGREDIENTS
- 100 grams unsalted peanuts
- 1 tablespoon Peanut oil
- 1 onion, chopped
- ½ cucumber, seeded and diced
- 1 mango, peeled, stoned and diced
- 1 fresh green chilli, seeded and chopped
- 2 tablespoon chopped fresh coriander (cilantro)
- 1 tablespoon chopped fresh mint
- 1 tablespoon lime juice
- Pinch of light muscovado sugar
For the chaat masala
- 1 teaspoon mango powder (amchur)
- ½ teaspoon garam masala
- 2 teaspoon ground toasted cumin seeds
- ½ teaspoon cayenne pepper
- Pinch ground asafetida
- Salt and black pepper
