ONION, MANGO AND PEANUT CHAAT

Preparation Method :

  • To make the chaat masala, grind all in the spices with salt and pepper together, then season with little oil.
  • Fry the peanuts in the oil until lightly browned, then drain on kitchen paper until cool.
  • Mix the onion, cucumber, mango, chilli, fresh coriander and mint in a bowl. Sprinkle in 1 teaspoon of the chaat masala.
  • Stir in the peanuts and then add lime juice and sugar to taste. Set the mixture aside for at least 20 minutes.
  • Spoon the mixture into a serving bowl, sprinkle another 1 teaspoon of the chaat masala over and serve.

INGREDIENTS

  • 100 grams unsalted peanuts
  • 1 tablespoon Peanut oil
  • 1 onion, chopped
  • ½ cucumber, seeded and diced
  • 1 mango, peeled, stoned and diced
  • 1 fresh green chilli, seeded and chopped
  • 2 tablespoon chopped fresh coriander (cilantro)
  • 1 tablespoon chopped fresh mint
  • 1 tablespoon lime juice
  • Pinch of light muscovado sugar

For the chaat masala

  • 1 teaspoon mango powder (amchur)
  • ½ teaspoon garam masala
  • 2 teaspoon ground toasted cumin seeds
  • ½ teaspoon cayenne pepper
  • Pinch ground asafetida
  • Salt and black pepper
