SPICY POTATO DUMPLINGS

Preparation Method :

  • Boil and mash the potatoes and combine with the crushed coriander seeds, dried red chillies, fresh coriander and salt.
  • To make the batter, sift the flour into a bowl, mix in all the other ingredients, gradually add all the water, beat to break up any balls that form. Make into a smooth paste.
  • Heat the oil in a deep frying pan. Make 10 small balls of the mashed potato mixture, about the size of golf balls, dip each ball into the batter and gently drop into the hot oil.
  • Fry, turning the balls all the time, until they are a golden colour. Place on a kitchen paper to absorb any excess oil. Serve immediately.

INGREDIENTS

  • 4 medium potatoes, peeled
  • ½ teaspoon coriander seeds, crushed
  • 1 teaspoon crushed dried red chillies
  • 2 tablespoons chopped fresh coriander
  • 1 teaspoon salt
  • Cooking oil for deep frying

Batter

  • 200 grams , gram flour
  • ½ teaspoon salt
  • ½ teaspoon chilli powder
  • ½ teaspoon crushed garlic     
  • ½ teaspoon diced and crushed ginger root     
  • 1 tablespoon chopped fresh coriander
  • 400 ml water
