- In a separate salad serving bowl, mix together the carrots, spring onions, cabbage, sultanas, cashew nuts, grapes and salt.
- Using a fork beat the yogurt in a bowl with the honey.
- Pour the sweetened yogurt over the salad, mix well.
- Garnish with mint and serve.
INGREDIENTS
- 350 ml natural (plain) low fat yogurt
- 2 teaspoon clear honey
- 3 medium carrots, thickly sliced
- 2 spring onions (scallions), roughly chopped
- 125 grams cabbage, finely shredded
- 50 grams sultanas
- 50 grams cashew nuts
- 12-15 white grapes, halved
- Salt
- 1 teaspoon chopped fresh mint
