YOGURT SALAD

4

Preparation Time :
15 minutes

Preparation Method :

  • In a separate salad serving bowl, mix together the carrots, spring onions, cabbage, sultanas, cashew nuts, grapes and salt.
  • Using a fork beat the yogurt in a bowl with the honey.
  • Pour the sweetened yogurt over the salad, mix well.
  • Garnish with mint and serve.

INGREDIENTS

  • 350 ml natural (plain) low fat yogurt
  • 2 teaspoon clear honey 
  • 3 medium carrots, thickly sliced 
  • 2 spring onions (scallions), roughly chopped
  • 125 grams cabbage, finely shredded 
  • 50 grams sultanas 
  • 50 grams cashew nuts
  • 12-15 white grapes, halved
  • Salt
  • 1 teaspoon chopped fresh mint
