TOMATO SALAD

Preparation Method :
- Heat the oil in a small frying pan and add the mustard seeds. Fry until the seeds begin to pop.
- Place the tomatoes, onion, fresh coriander, fresh mint leaves, green chilli, garlic, seasoning and dry-roasted cumin seeds all together in a bowl.
- Pour the mustard seeds and oil over the tomato salad mixture. Gently combine the ingredients.
- Squeeze the lime juice over the salad, cover and allow to rest at room temperature for about half an hour.
- Serve chilled as a starter.
INGREDIENTS
- 550 grams plum tomatoes on the vine, deseeded and finely chopped
- 1 red onion, finely chopped
- 2 tablespoons finely chopped fresh coriander
- ½ teaspoon cumin seeds, dry roasted and ground
- ½ teaspoon mustard seeds
- 1 tablespoon finely chopped fresh mint leaves
- 1 green chilli, deseeded and finely sliced
- 1-2 garlic cloves, crushed
- 2 teaspoon Cooking oil
- Juice of 1 lime
- Salt and freshly ground black pepper, to taste
