TOMATO AND RED ONION SALAD
This salad makes a delicious appetizer. The under-ripe mango blends well with the tomato.

- Using a sharp knife or peeler, remove the skin from the mango, then cut and slice the flesh into bite-size pieces.
- Arrange the mango, tomatoes, onion, and cucumber on a large serving plate.
- Make the dressing by blending the oil, lemon juice, garlic, pepper sauce, and seasoning in a blender or food processor; or shake vigorously in a small screw-top jar.
- Spoon the dressing over the salad.
- Garnish with the chopped chives and serve.
INGREDIENTS
- 1 firm under-ripe mango
- 2 large tomatoes or 1 beefsteak tomato, sliced
- ½ red onion, sliced into rings
- ½ cucumber, peeled and thinly sliced
For the dressing
- 2 tablespoons Sesame oil
- 1 tablespoon lemon juice
- 1 garlic clove, crushed
- ½ teaspoon hot pepper sauce
- Salt and ground black pepper
For the garnishing
- Chopped chives
