SPROUTED BEAN SALAD

- Heat the olive oil in a small frying pan over a medium heat and add the mustard.
- When the seeds begin to pop, remove from the heat and mix the spice mixture into the oil in the pan.
- Place all the remaining ingredients into a large salad bowl.
- Pour the spiced oil over the salad. Toss the salad until the yellow colour of the spice comes through.
- Finish with tomato slices and serve as a starter.
INGREDIENTS
- 500 grams bean sprouts
- 4 teaspoon lemon juice
- ½ teaspoon mustard seeds
- 1 tablespoon olive oil
- 1 green pepper, finely chopped
- 1 onion, finely chopped
- 1 green chilli, deseeded and finely sliced
- 2-3 garlic cloves, crushed
- 2 tablespoons finely chopped fresh coriander
- Salt and freshly ground black pepper, to taste
- 1 plum tomato, sliced, to finish
Spice Mixture
- ½ teaspoon turmeric powder
- ½ teaspoon chilli powder
- ½ teaspoon cumin powder
