SPROUTED BEAN SALAD

Preparation Time :
10 minutes

Preparation Method :

  • Heat the olive oil in a small frying pan over a medium heat and add the mustard.
  • When the seeds begin to pop, remove from the heat and mix the spice mixture into the oil in the pan.
  • Place all the remaining ingredients into a large salad bowl.
  • Pour the spiced oil over the salad. Toss the salad until the yellow colour of the spice comes through.
  • Finish with tomato slices and serve as a starter.

INGREDIENTS

  • 500 grams bean sprouts
  • 4 teaspoon lemon juice
  • ½ teaspoon mustard seeds
  • 1 tablespoon olive oil
  • 1 green pepper, finely chopped
  • 1 onion, finely chopped
  • 1 green chilli, deseeded and finely sliced
  • 2-3 garlic cloves, crushed
  • 2 tablespoons finely chopped fresh coriander
  • Salt and freshly ground black pepper, to taste
  • 1 plum tomato, sliced, to finish

Spice Mixture

  • ½ teaspoon turmeric powder
  • ½ teaspoon chilli powder
  • ½ teaspoon cumin powder
