SPICY SALAD WITH GINGER AND CHILLI

Preparation Method :

  • Cook the noodles in plenty of boiling water for 5 minutes or according to packet instructions. Drain, refresh under cold running water and drain well. Gently mix the chopped cabbage with the noodles.
  • Combine the turmeric, garlic, root and pickled ginger, oil, chilli, coriander and spring onions and season to taste with salt.
  • Toss this mixture with the noodles until they are evenly coated. Add lime juice and onion pepper to taste and serve cold.

INGREDIENTS

  • 250 grams soba noodles
  • 100 grams white cabbage, chopped
  • 2 teaspoon turmeric
  • 2 garlic clove, crushed
  • 2 teaspoon grated root ginger
  • 2 tablespoon shredded pickled ginger
  • 4 tablespoon sesame oil              
  • 2 fresh red chilli, finely chopped
  • 4 tablespoon chopped fresh coriander
  • 4 spring onions, finely chopped
  • Salt to taste
  • Juice of 1 lime
  • 1 teaspoon onion pepper
