SPICED MUSHROOM SALAD

Preparation Method :
- Melt the oil and butter together in a medium non-stick frying pan. Add the onion and cook until just golden, about 5 minutes.
- Add the garlic paste and ginger and cook for about half a minute before stirring in the turmeric, coriander powder. Adjust seasoning with salt and chilli powder.
- Add in the mushrooms and toss well to mix. Cover and cook for about 2 minutes or until softened, with little water if needed.
- Add the tomato and yoghurt and cook over a moderate heat until the tomato has softened, about 3-4 minutes.
- Add the remaining spices with mint and coriander leaves. Serve warm on the lettuce.

- 250 grams mushrooms, thickly sliced
- 50 grams tomato, roughly chopped
- 2 tablespoon low-fat yogurt, beaten
- ½ small onion, sliced
- 1 teaspoon garlic paste
- ½ teaspoon fresh ginger, chopped
- ½ teaspoon Sesame oil
- ½ teaspoon butter
- ¼ teaspoon turmeric powder
- 1 teaspoon coriander powder
- A pinch of red chilli powder
- ½ teaspoon garam masala
- ½ teaspoon dried mango powder
- Salt to taste
- 2 tablespoon roughly chopped Fresh coriander
- 2 tablespoon chopped fresh mint
- Soft lettuce leaves to serve
