SPICED MUSHROOM SALAD

Preparation Time :
15 minutes

Cooking Time :
10 minutes

Preparation Method :

  • Melt the oil and butter together in a medium non-stick frying pan. Add the onion and cook until just golden, about 5 minutes.
  • Add the garlic paste and ginger and cook for about half a minute before stirring in the turmeric, coriander powder. Adjust seasoning with salt and chilli powder.
  • Add in the mushrooms and toss well to mix. Cover and cook for about 2 minutes or until softened, with little water if needed.
  • Add the tomato and yoghurt and cook over a moderate heat until the tomato has softened, about 3-4 minutes.
  • Add the remaining spices with mint and coriander leaves. Serve warm on the lettuce.

INGREDIENTS

  • 250 grams mushrooms, thickly sliced
  • 50 grams tomato, roughly chopped
  • 2 tablespoon low-fat yogurt, beaten
  • ½ small onion, sliced
  • 1 teaspoon garlic paste
  • ½ teaspoon fresh ginger, chopped
  • ½ teaspoon Sesame oil
  • ½ teaspoon butter
  • ¼ teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • A pinch of red chilli powder
  • ½ teaspoon garam masala
  • ½ teaspoon dried mango powder
  • Salt to taste
  • 2 tablespoon roughly chopped Fresh coriander
  • 2 tablespoon chopped fresh mint
  • Soft lettuce leaves to serve
