RAW VEGETABLE YAM
In this context, the word "yam" does not refer to the starchy vegetable that resembles sweet potato, but rather to a unique style of Thai cooking. Yam dishes are salads made with raw or lightly cooked vegetables, dressed with a special spicy sauce.

- Place the watercress or spinach, cucumber, celery, carrots, red pepper, and tomatoes in a bowl.
- Add the chopped mint and toss together.
- Soak the noodles in boiling water for 3 minutes, or according to the packet instructions.
- Drain well and snip with scissors into shorter lengths. Add them to the vegetables.
- To make the yam, put the chopped chillies in a pan and add the soy sauce, lemon juice, sugar, and water.
- Place over medium heat and stir until the sugar dissolves.
- Add the chopped garlic, with the pickling vinegar from the jar, and then mix in the chopped nuts, tofu, and toasted sesame seeds.
- Pour the yam over the vegetables and noodles, toss together until well mixed, and serve immediately.
INGREDIENTS
- 50 grams watercress or baby spinach, chopped
- ½ cucumber, finely diced
- 2 celery sticks, finely diced
- 2 carrots, finely diced
- 1 red (bell) pepper, seeded and finely diced
- 2 tomatoes, seeded and finely diced
- Small bunch fresh mint, chopped
- 100 grams cellophane noodles
For the yam
- 2 small fresh red chillies, seeded and finely chopped
- 4 tablespoons light soy sauce
- 3 tablespoons lemon juice
- 1 teaspoon palm sugar or light muscovado (brown) sugar
- 4 tablespoons water
- 1 head pickled garlic, finely chopped, plus 1 tablespoon vinegar from the jar
- 50 grams peanuts, roasted and chopped
- 100 grams fried tofu, finely chopped
- 1 tablespoon sesame seeds, toasted
