PAPRI, POTATO AND CHICKPEA SALAD

- Make a base with the papri and scatter over the potato and chickpeas. Top with the seasoned yogurt.
- Sprinkle with the spices and drizzle over the chutneys. Top with the coriander and serve immediately.
INGREDIENTS
- 250 grams chickpeas, drained and rinsed
- 6-8 papri
- 1 small potato, cooked, peeled, cubed and chilled
- 50 ml low-fat yogurt, thinned with little water and seasoned
- ½ teaspoon roasted cumin powder
- A pinch of red chilli powder
- Salt to taste
- 2 tablespoon Thick tamarind juice
- 1 tablespoon Green Chutney
- 3 tablespoon chopped fresh coriander
