ONION& HERB WITH SALAD CHORIZO

Preparation Time :
15 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Heat the oil in a non-stick frying pan over a medium heat, add the onion and cook, stirring frequently, until softened but not browned. Add the beans and cook for a further minute, then add the vinegar, stirring well. Keep warm.
  • Meanwhile, heat a separate dry frying pan over a medium heat, add the chorizo slices and cook, turning occasionally, until lightly browned. Remove with a slotted spoon and drain on kitchen paper.
  • Mix the tomato and harissa paste together in a small bowl. Divide the herb salad between 2 plates, spoon over the bean mixture and scatter over the warm chorizo slices.
  • Top with a spoonful of the tomato and harissa mixture and serve immediately.

INGREDIENTS

  • 2 tablespoon sesame oil
  • 2 small onion, finely sliced
  • 300 grams canned butter beans, drained and rinsed
  • 2 teaspoon balsamic vinegar
  • 4 chorizo sausages, sliced diagonally
  • 2 small tomato, diced
  • 4 tablespoon harissa paste
  • 100 grams mixed herb salad
