NOODLE CUCUMBER SALAD

Preparation Method :
- Peel the cucumber and slice thinly. Rinse under cold running water, then mix with salt. Leave to stand for 15 minutes, then use and drain well.
- Pour boiling water over the noodles and leave to stand for 5 minutes or according to packet instructions. Drain and refresh under cold running water. Drain well.
- Mix together the sesame oil, rice vinegar, soy sauce and lime juice. Reason to taste, then toss with the noodles.
- Stir the cucumber and beansprouts into the noodles. Serve sprinkled with the sesame seeds.

- 600 grams cucumber
- Salt and freshly ground black pepper
- 100 grams rice vermicelli noodles
- 4 tablespoon sesame oil
- 4 tablespoon rice vinegar
- 2 tablespoon light soy sauce
- Juice of 1 lime
- 150 grams bean sprouts
- 4 tablespoon sesame seeds, toasted
