MOONG DHAL SALAD

- Soak the moong dhal in water for an hour.
- Then, drain the water and add the coconut, the carrot, the cucumber, the onion and the roasted groundnut and mix well.
- Now add the lime jice and salt and mix.
- Heat up the sesame oil in a frying pan and when the oil is hot , add the mustard seeds.
- When the mustard seeds start spluttering, add the urad dhal and curry leaves and fry till golden brown.
- Add the hot seasoning to the salad and garnish with coriander leaves.
INGREDIENTS
- 100 grams of moong dhal
- ½ coconut, grated
- 1 carrot, shredded
- 1 cucumber, finely chopped
- 1 onion, finely chopped
- 4 teaspoons of roasted groundnut, skin removed
- 1 teaspoon of sesame oil
- 1 teaspoon of mustard seeds
- 1 teaspoon of urad dhal
- 3 curry leaves
- 1 teaspoon of lemon juice
- Salt to taste
- 1 teaspoon of sesame oil
