- Core the apples, cut in half and then slice thinly. Sprinkle the lemon juice over the apples immediately to prevent discolouration.
- Peel the oranges and separate into segments. Cut each segment in half, removing any pips. Cut the cucumber in half lengthways and slice thinly.
- Prepare the remaining fruit and vegetables as required and place with the other salad ingredients in a bowl.
- For the dressing, simply combine the chopped coriander and mint, chillies, chaat masala, salt and remaining lemon juice. Toss the salad in the dressing and serve chilled.

- 4 medium-sized apples
- 4 tablespoons lemon juice
- 4 medium-sized oranges
- 2 medium-sized cucumber
- 20 seedless green grapes, halved
- 20 seedless black grapes, halved
- 4 medium-size tomatoes, seeded and cut into strips
- 2 medium-size green pepper, seeded and cut into strips
- 4 spring onions, thinly sliced
- 50 grams fresh coriander leaves, chopped
- 50 grams fresh mint leaves, chopped
- 4 green chillies, chopped
- 2 teaspoon chaat masala
- 1 teaspoon salt
